Grilled Macaroni and Cheese Sandwich

This grilled cheese sandwich is stuffed with creamy macaroni and cheese for double the gooey cheesy deliciousness.

Remember when I mentioned I was making my one serving macaroni and cheese for another recipe? Well, this is it.

A few weeks ago, we had the macaroni and cheese grilled cheese sandwich from The Grilled Cheese Truck. I thought it was tasty, but something I could easily recreate at home. So I did.

I've been a little obsessed with grilled cheese lately, so expect to see some more variations in future posts.

 Yesterday our new patio set arrived. And of course, today we had a crazy storm. The weather was definitely strange today. Most of the day was extremely hot, in the continual heat wave that has lasted more than a week now. I didn't actually realize how bad it was until I read that they've even shortened the school schedules. I never experienced any shortened days due to heat before! Then in the afternoon it started to rain. I had heard of the possibility of a storm, but it seemed so unlikely given how hot and sunny it was. And then suddenly the rain turned into a full-on storm, with thunder and extreme winds. The winds were strong enough to actually knock over a bunch of our fruit trees, though luckily we were able to save them.

Anyhow, I was able to make the macaroni and cheese in the microwave and only had to turn on the stove for a few minutes to heat up the sandwich and make the bread crunchy and golden. I was pretty pleased with the outcome. It definitely wasn't hot soup weather, so we ate this with cold milk instead.

  • 4 slices of sandwich bread
  • 2 tbsp butter spread
  • 4 slices of cheddar cheese
  • 1 serving macaroni cheese
  • Make macaroni and cheese. Spread about 1/2 tbsp butter on one side of each slice of bread.

  • Place a slice of cheese on top of each un-buttered side of bread. Spread half of the macaroni cheese on one piece of bread and the other half on another piece of bread. Place remaining slices of bread on top, to form two sandwiches.

  • Place a frying pan on the stove and turn to medium heat. Once hot, place both sandwiches in the frying pan, cooking the buttered sides until golden and toasty and the center of the sandwiches are melty.
